Our opinion on Shake Shack’s black truffle burger and black truffle fries


Shake Shack is a bit of an anomaly in the fast-paced, laid-back space. On the one hand, they make what is by far the best beef patty of any fast food restaurant, with meat sourced from reputable butchers with years of experience. Then they top that shit with American cheese and serve it with frozen fries and a birthday cake-tasting milkshake. Rather than doubling down on gourmet prep like most fast-casual joints, Shake Shack is playing for the fast food crowd.

They include American cheese because it melts faster and better than any fancy aged cheese. The better crispy frozen fries. The milkshake tastes like a birthday cake because who doesn’t love a birthday cake? But we’d be lying if we weren’t at least curious about what Shake Shack could create if they got greedy. If they’ve treated every item on their menu with the same craftsmanship and care they’ve put into their delicious beef patties, how deep can Shake Shack’s flavor be?

The new Black Truffe Burger answers these questions for us. After a successful pilot launch at a few cabins in New York and California last December, Shake Shack’s new Black Truffle Burger and Garlic Parmesan Fries with Black Truffle Sauce will be added to the menu at Shake stores. It’s not because they’re crinkle cut (although the crinkle cut is the worst form factor of French fries) and it’s not because they’re frozen before being fried. It’s just because they’re boring. They don’t even really taste like french fries to me, they just taste like a fried texture that is in desperate need of sauce and seasoning.

So every time Shake Shack does something to their fries, I’m intrigued. But they really got him out of the park with his. Garlic Parmesan Fries with Black Truffle Sauce consists of a basket of crinkle cut fries sprinkled with a fragrant pinch of Parmesan and chopped garlic and served with a cup of the new sauce. Shake Shack’s Black Truffle for Dipping, which comes from Regalis Foods and is made from USDA Organic Black Truffle Arbequina Oil.

As you would expect, the oil is well sourced and flavored with real truffles, apparently making it the only truly natural truffle product on the fast food market. According to Shake Shack, 98% of the truffle products sold worldwide are in fact artificially flavored with synthetic essences and flavors – a point with the media and independent research has also argued.

Costs. What does it taste like? Well, in a nutshell – delicious.

So delicious in fact that I wish Shake Shack had taken the liberty of putting it on the fries! The tangy, nutty and spicy qualities of the Parmesan and Garlic combo – which is already bursting with plenty of flavor – come to life when paired with the sauce’s deep umami complexity, igniting your taste buds in a way that literally makes you feel go “mmm!” like an idiot in the middle of Shake Shack.

Yes, they are so good.

The essentials about fries:

It’s a must order, but I have a message for Shake Shack: be brave! Toss that sauce over the fries and add some bacon and you’ve got a dressy fry that beats any order of chili cheese fries as well as In-N-Out’s legendary animal-style fries.

As if the fries weren’t good enough, we come to the real star of the show, the Black Truffle Burger. Composed of a hamburger patty (or two, if you get double) topped with melting Gruyere and a portion of crispy shallots sandwiched between a grilled potato bread brushed with the same black truffle sauce served with fries, this burger is a straight pomegranate of flavors.

Different flavors strike your taste buds from all angles like shrapnel – the creamy and salty Gruyere elevates the savory juiciness of the beef, while the crispy fried shallots add a remarkable crunchy mouthfeel that induces a delicate sweetness counterbalance to the beef. mixture of meat and salty cheese. The contrasting flavors then blend in harmony, thanks to the deep umami qualities of the sauce.

All of this takes you on a wonderful ride. The toppings resemble the gourmet ingredients that Shake Shack’s exceptional hamburger meat deserves. Is it better than the Shack Burger? From a purely taste point of view, I mean yes. But the flavor comes with such decadent intensity that I don’t really see myself ordering this like my new standard order at Shake Shack.

A burger with classic toppings, including American cheese, is so hard to beat, which is probably why it’s the Shake Shack standard in the first place. But now we know how beautiful it is to fly so close to the sun!
